Taleggio
A cow’s milk cheese with a high fat content that lends it an exceptionally creamy and semi-soft texture. It has a mellow taste with fruity undertones. The name Taleggio has been used before the 10th century in the caves of Val Taleggio. It might be one of the oldest soft cheeses. Production takes place every autumn and winter when the cows tire and are ready to rest.
P’tit Basque
This is a semi-soft sheep’s milk cheese crafted by hand in the French Pyrenees,
where it is cold aged for 70 days. It has a dry texture and an earthy, nutty flavor.
Tumbleweed
Produced by 5 Spoke Creamery, this semi-hard cheese is a cross between
Cantal Fermier and aged cheddar. It is cave-aged for eight to nine months, and as a result has a uniquely curdy texture while retaining a cheddar-like creaminess. The flavor is fruity,
with hints of brown butter.
Bayley Hazen Blue
A new American original cheese made from raw cow’s milk from Jasper Hill Farm.
The farm is in Greenboro, Vermont.
Rainbeau Ridge Chevre
Lisa and Mark Schwartz have 35 Alpine goats and make cheese in their 35-acre farm
in Bedford Hills, NY. They are committed to making cheese with traditional cheese making techniques. As a result the Rainbeau Ridge is a perfect example of a lovely, rustic
and terroir driven goat cheese. It’s Rebecca’s personal favorite! She describes it as “pure.”
